Goat Cheese and Herb Scrambled Eggs

My favorite breakfast (or lunch) as of late. It’s so quick to whip up and that’s good with the baby around. This is based on Ina Garten’s slow-cooked scrambled eggs that I saw on Food Network.

I love Food Network and use it as white noise during the day. E used to nap in the living room and would wake up to every little noise if it’s dead quiet. And for me, too – when it’s dead quiet, I go a little crazy. George doesn’t get my fascination with cooking and food shows and can be seen shaking his head when I have them on.

George: When you’re not eating, you’re watching shows about food and eating.

Me: What’s wrong with that?

What can I say? Food makes me happy. I was pretty upset when I was pregnant and couldn’t eat. My stomach felt like it was the size of a tennis ball and even food that I normally enjoyed I couldn’t stand. I ended up losing almost 20 lbs from my pre-pregnancy weight. No worries, though, I’m making up for lost time. After giving birth, it was like, “Oh my god! Food never tasted so good.” And breastfeeding made me SO HUNGRY. It was great to have an excuse to eat all the time. Even my OB said at post partum checkup to “go ahead and have that ice cream.” I wanted to hug her.

Anyway, before I get too carried away… :)

Goat Cheese and Herb Scrambled Eggs
Servings: 1

(this is a recipe of estimates)

a few sprigs of parsley or dill, roughly chopped
crumbled goat cheese
2 eggs
couple splashes of milk
salt and pepper to taste
pat of butter

– Beat eggs in a bowl with milk, salt, and pepper.

– Heat a pat of butter in a pan over medium heat. Add the eggs and stir constantly until desired doneness.

– Stir in the herbs and goat cheese until cheese is melted.

Things I miss about New York City

Family and friends. This is a given, and has nothing to do with New York City really. But, I miss loved ones the most and this list would be incomplete without them.

FOOD! Yes, food! I miss the usual suspects, like bagels and pizza, and the variety of food available in the city. In our old Brooklyn neighborhood, we had lots of small (and inexpensive) places to eat – from Turkish gyro to Vietnamese pho to Italian pastry shops and everything in between. Good sushi can be from a small, unassuming restaurant. And, of course, there’s the rest of the city when you feel like trying something new.

Although I enjoyed having access to different kinds of food, there’s nothing I like better than a home-cooked meal. It was good to have produce stores, butcher shops, and seafood places, where we can count on things to be fresh.

Our apartment. While I don’t particularly miss apartment living, I miss our old place. It was home for almost 3 years and the memories are good. I remember the sunsets, our summer garden, our tiny but cozy living room, and the also tiny kitchen where we experimented and learned how to cook together.

Places. I loved the many parks and beaches of the city. One of my favorite things to do was to go to the beach in winter when it’s quiet and not too crowded. We used to go to Coney Island or Caesar’s Bay on weekends, and we’d eat lunch while we looked out the ocean or watched the ships and the boats. I remember going to the beach during a storm; it was so windy and we could hardly see anything through the ocean spray, and the only other person there was a guy with a camera. And going to Inwood Park during a blizzard just because it was fun. Pre-baby days, gotta love them ;)

Walking. I miss being able to walk to almost anywhere. I didn’t need a car for basic things like food shopping, the post office, or the bank. We used to step out in the evenings for a walk around the neighborhood, to go to the park, and to see family.

The subway. I have a love-hate thing with the NY subway system. It’s dirty, smelly, your personal space is constantly invaded, you need to be on the lookout for weirdos or phone/purse snatchers, and there’s too many angry people. But, the subway took me where I needed or wanted to go.

There are other intangible things. I like the anonymity since I tend to be a loner and shy away from too much social interaction. Strange as it may sound, this gives you privacy in a place where people are packed 27,550/square mile. Living in the city can be tough and unforgiving, but the place is also full of life and energy. As Myrna Loy said, “Something’s always happening here. If you’re bored in New York, it’s your own fault.”

exploring the Great Bay

I was happy to discover an access point to the Great Bay not too far from where we live. The area is known as Spartina Point. It’s about a half a mile walk from the entry at Bayside Road to the bay. The trail is fairly easy (wide and mostly level), and beautiful in white snow cover and trees lining each side of the trail. Halfway in is a parking area, and after crossing a railroad track, the trail continues in the forest.

Being the scaredy-cat that I am, I kept saying, “No! We are not going past the tree line! We don’t know this place yet.” And of course, George being George, kept walking onto what we thought was a frozen marsh right up to the edge of the frozen bay. At some point I stepped on soft snow and sank almost to my knees. Naturally, I yelled out, “I’m sinking!” George said, “Stop sinking,” without so much a glance back.

George would say I’m telling blatant lies :) Really, I enjoyed myself immensely and we weren’t in any danger. I’m looking forward to seeing the bay and the trail in different seasons, and finding similar places around our new town.

New Beginnings

Hello, blog :) It’s been a while.

I’ve been wanting to return here but life has been hectic since the last quarter of 2013. We went through big changes: relocated to a new state (NH) and we welcomed a new and tiny member to our family. The pregnancy, labor and delivery, becoming a mom, and my day-to-day life with the little peanut – all rewarding and challenging times. I couldn’t have imagined what it would be like going through them until I actually was. It has been a physical, mental, and emotional rollercoaster. I hope to document this time before I forget everything :)

Naively, we decided to move one month before my due date, even with family and friends warning us that with the baby coming it’s probably best to stay where we are nicely settled and we have a good support system. Now we know not to do a major move when we’re expecting a baby haha. But, I can’t really say I regret our decision. This is a learning experience for us and I’d rather we do this now than wait more years. We are not getting younger after all and want to set down roots before our kid(s?) get older.

Have you ever heard of the saying, “Man plans, God laughs?” That’s a good way to describe our out-of-state move. We thought that we planned everything well but things that we couldn’t have predicted happened. In the first two months, we moved twice. When we checked in the hospital to give birth, we weren’t sure where we would be taking the baby home. Luckily, George found a temporary rental before discharge otherwise we will end up in a hotel with a newborn. We were exhausted. Finally, we are now slowly getting settled in. We finished unpacking a couple of weeks ago and are now focused on the day-to-day life with our baby and slowly getting to know our new area.

I will be home with the baby for a while and one of my goals is to continue and grow this blog. I have another project on the side that I want to finish. For now, it looks like The Boss is waking up from her nap so off I go :)
