I want to remember the everyday. We look forward to, plan, and record holidays, vacations, special occasions but the everyday goes by unnoticed and easily forgotten. Yet life is made up mostly of routines and ordinary days. So, I will make a conscious effort to look at the small details and keep memories.

Spinach-Apple Salad with Lemon Dressing

This recipe came together from throwing ingredients we always have on hand in a bowl. Well I call it a recipe but I can’t even tell you the exact amounts. Also, I used a regular tablespoon, not a measuring spoon.

Serves 1

a couple handfuls of baby spinach
1 apple, sliced
a handful of pecans, roughly chopped
about 2 tablespoons goat cheese, crumbled

Dressing:

1 tablespoon lemon juice
2 tablespoons olive oil
1 clove of garlic, finely minced
salt and pepper to taste

– whisk dressing with a fork. Place salad ingredients into a bowl, drizzle in dressing, and toss to coat.

Great Brook Trail

Last weekend we headed out to Deerfield for a nature walk. We were looking for a quiet and easy trail that’s more of a hike through the forest rather than a mountain climb. Great Brook Trail did not disappoint. While we liked the trail, we went unprepared and only saw a small part of it. I think it was partly because of the sudden change of weather, and really, we’re just out of hiking form. Besides warmer clothes, we could have worn hiking boots. I have a tendency to roll my ankles, did just that three weeks ago, and ended up with a sprained ankle. It’s mostly healed but I still get a little twinge here and there. Anyway, we decided we will go back and explore this spot again.

Speaking of weather, I’m so glad that fall is around the corner. I love the cooler temps and can’t wait for the fall foliage. Not that we had a really hot summer (George calls this year The Year of the Lost Summer) but it’s always been my least favorite season. The unbearable heat, the stickiness, and the bugs! You can call me the summer grinch.

holiday weekend

We drove up to North Conway during the holiday weekend two weeks ago. It was our first day trip with E, and we were surprised at how enjoyable the experience was. E was pretty difficult when she was younger so we got used to keeping our outings short or with a purpose, i.e. errands. Now we have this curious little girl with an easy smile who’s able to take part in the things we love.

Part of the fun for us is being on the road so we took a leisurely drive going through country roads. It’s good that George enjoys driving and I enjoy being in the passenger seat, watching the scene, sipping on a hot beverage, and taking occasional naps. It works out :)

We spent most of the day in Echo Lake State Park. The trail around the lake was easy and short, but with beautiful views of the mountains. There was a picnic/beach area and we sat down for a little bit to rest, soak in some sun, and people watch. I was frustrated that I couldn’t get a decent shot of the scenery. I have to practice with the camera more.

The downtown area was alive and busy. We just grabbed a couple of sandwiches and parked next to a field for our late lunch (photo above). Again, amazing views of the White Mountains that I couldn’t capture with the camera, but enjoyed with my eyes. It would be nice to come back to this place and hike up the mountain ledges. I’m also looking forward to exploring more of New Hampshire. This day was a good start.
